Soul áp dụng men rượu nếp (fermented glutinous rice) cho giống Cà Sẻ như một điểm nhấn trong nguyên liệu tạo nên một nốt hương rất Việt Nam. Cà phê được thu hái chín 100%, rửa sạch và lên men, khi hệ sinh thái men phát triển đến cao điểm, cà phê được đem phơi dưới nắng cho đến khi đạt độ ẩm. Việc lên men lần 2 sẽ tiếp tục diễn ra ngắn với men rượu nếp vắt, tiếp tục phơi và lên men thêm lần nữa. Cà phê được phơi chậm và kết thúc khi độ ẩm và hương vị đạt tiêu chuẩn. Robusta Sẻ, which is the pure Robusta breed without crossbreeding, is a tiny yet sturdy and weighty bean. The mature fruit provides a high-quality taste, scent, and distinctive flavor. Soul uses fermented glutinous rice on the Sẻ type as a key ingredient for a distinctly Vietnamese taste. The coffee beans are picked when fully ripe, then washed and fermented. Once the yeast ecosystem reaches its maximum level of development, the coffee beans are left to dry under the sun until they reach the desired moisture level. The squeezed glutinous rice yeast will continue to undergo a short second fermentation, followed by another round of drying and fermenting. The coffee undergoes a gradual drying process until reaching the acceptable moisture and flavor levels. |
