Description |
To control and enhance the flavor from TR varieties, Soul applies dry processing methods (natural) with local fruit yeast to add yeast strains to create habitat, increase the number of microorganisms to orient positive changes in taste. The collected coffee is 100% ripe, then washed and fermented for 3 days, exposed to the sun until the moisture content reaches, continues to ferment for the second time with local fruit yeast and continues to be slowly dried from 20 days. Thanks to the rigor in each stage, it has created a certain balance in taste, deep taste by the gentle sourness, deep sweetness besides the aroma of ripe fruit, is the highlight of this worth trying coffee in this year's season of Soul. |
